Pineapple chicken wraps ....



If you fancy trying something different then you really should give this a go.

This was a childhood favourite of mine, my mums take on a meal we used to get when we were living in South Africa
She used to do it in pittas but the boys prefer wraps...

What you'll need
Diced chicken breasts
1 onion chopped finely 
Pineapple juice 
Tortilla wraps 

For the added sauce 
Ketchup
Mayonnaise 

What to do 

Fry off the onion until soft, add a little pineapple juice and let it sweat.
Add the chicken
Once browned add about a cup more of pineapple juice.


Let it simmer until the pineapple juice has been absorbed.


While that is cooking, you can mix the sauce.
I use about two tablespoons of ketchup and two tablespoons of mayonnaise, mix together until it's a nice pink colour.
This goes really well inside the wraps and on the side of the plate!

Once the chicken is ready, place it into the wraps, you can add salad but that's completely up to you.

Tonight I'll be serving this up with skinny chips!
